Hello campers and welcome to the Mess Hall! Here’s where you’ll see whatever camp treat is cooking for the day. Today we’re firing up the grill to make skewers! Skewering is one of the many forms of preparing food. You can use it to grill, or just to present/eat food.

Skewers are also one of my favorite ways to prepare food for a picnic or for camp. With just a few minutes at home, you can arrive to your picnic/camp with a meal already prepared or ready to put in the fire to cook it!

You can have savory or sweet skewers, veggie only, or meaty options. The idea or the base is the same, no matter what ingredients you choose. Just chop everything to a small size, square or slice, and put it through a skewer (wood or metal, though if you use a wood and you’ll be cooking it in the fire, first soak the wood sticks in water for at least 30 minutes, as this will prevent the wood from burning).

I’m sharing 2 recipes… A salad and a surf and turf type.

First the salad!

One of the salads that is perfect to present/eat on a skewer is the greek salad, because all the ingredients can be chopped in the size and form to go through the skewer with no type of problem.

Salad Skewer Ingredients

  • Cherry tomatoes
  • Olives
  • Feta cheese
  • Cucumber

Salad Skewer Method

The only ingredients that you need to do any preparation for, besides cleaning/washing your produce, are the feta cheese and cucumber. For the feta cheese, just chop it in cubes and slice the cucumber in quarters.

Then it’s time to assemble! Grab a stick and put a cherry tomato, an olive, a feta cheese cube and a cucumber slice. Then repeat it on the same skewer (depending on the size you are making it) or start a new one. When all your salad skewers are ready, pack them, for your picnic/camp for example. When it’s time to eat, just drizzle on your favorite dressing, or eat it as it is. The flavors and freshness of the ingredients don’t need much more of anything to be a perfect meal or snack.

And for the Surf and Turf skewers? Easy as well, you just need to cook it in the fire or in a skillet.

  • Shrimp
  • Sausages
  • Pineapples
  • Salt & Pepper

Surf and Turf Skewers Method

Grab your skewer and start the construction: 1 shrimp, 1 slice of sausage, 1 pineapple chunk. Then repeat the pattern on the same skewer (depending on the size you are making it) or start a new one. When it’s done, just season with salt and pepper.

Cook using the grill or a skillet. Don’t forget to brush a little oil or butter on your grill or skillet so your skewer doesn’t stick. Cooking will take around 3 mins per side.

You can drizzle on a little bit of lemon juice to finish it up and it’s ready to eat, or to pack for your picnic/camp, because it’s a skewer that will be fine eaten cold!

You can use only shrimp or only sausage, depending on what you like.

And of course, both recipes can be changed to your taste. There aren’t measurements that you need to follow, just use the ingredients that you like and have on hand!
