Granola is a breakfast or snack food consisting of rolled oats, nuts, honey or other sweeteners such as brown sugar, is usually baked until it is crisp, toasted and golden brown. Nowadays can have lots of different combinations and flavors.

Supplies:

  • 2 cups rolled oats
  • 1 cup of milk chocolate (chips or chopped)
  • 1 cup of mini marshmallows
  • 1 tsp cinnamon
  • 1/4 cup coconut oil (or vegetable oil)
  • 1/3 cup honey (or maple syrup, if vegan)
  • 1 tbsp vanilla

large granola pieces with chocolate chunks and mini marshmallows, in a glass bowl on a wooden surface

S’mores Granola Instructions:

Preheat your oven to 300F (150C) and line a baking pan with parchment paper.

In a large mixing bowl, add oats and cinnamon, stir them together.

In a small, microwave safe bowl, add your coconut oil and microwave till melted (about 1 minute. If using vegetable oil you don’t need to microwave it). Add your honey, whisk them together, and microwave them again till they warm (about another 30-60 seconds). Add your vanilla and whisk it it.

Pour your wet ingredients over your dry ingredients, and stir till all of your oats are covered entirely. Pour your granola onto your pan and spread it out into one, thin, even layer. Bake in the oven for 15-20 minutes, or till the edges are just starting to gain a bit of color. I like to rotate the tray during the baking time, and also mix everything. The granola will get crunchy as it cools.

Let granola cool entirely, before breaking it up into pieces. Next is time to add the chocolate and marshmallows. And your S’mores Granola is ready.

You can eat your granola with yogurt or mail. Or even just has it is!
