There are lot of ways to cook and bake, but with our busy schedules we want the fastest and easiest ways to do it! Cooking and baking with foil is awesome, because you can prepare everything in advance, cook, and it’s ready for you to take it with you: to work, a picnic, or to camp! Food we can take along on our adventures; the best, right?

For IGGPPCamp, I’m sharing 2 recipes, a savory and a sweet.

First the main dish… we’re making Loaded Potatoes!

Foil Cooked Loaded Potatoes Ingredients:

(the amount of the ingredients is up to you, and depends if you are making for 1 or for 4 or more)

  • Potatoes (chop in small quarters)
  • Cheese (of your choice, but it needs to be good to melt, like cheddar or mozzarella)
  • Bacon, cooked and chopped (and if you don’t eat meat you can always skip this one)
  • Butter
  • Garlic powder
  • Salt & Pepper
  • Other seasoning to your preference!

Loaded Potatoes Method:

This recipe is super simple and easy. Even if you aren’t an expert in the kitchen, this recipe is perfect for you!

Take a large square of aluminum foil and put the chopped potatoes in the middle, along with the cheese and bacon. Season with salt and pepper. Add the garlic powder to your taste–you can even add a bit of onion powder or even some dry herbs! Toss everything together, then top with a few teaspoons of butter. And that is it!

Close the foil tightly, forming a package. If you are at home, put in the oven for about 30 minutes at 350F/170ºC. (They will be done when you can easily insert a fork.)
If you are at a camp site, put the package in your fire pit until the potatoes are soft when poked with a fork.

Be careful when you open the package so you don’t burn with the steam.

Now the sweet…Apple Pie! (2 servings)

Foil Baked Apple Pie Ingredients:

Apple “filling”

  • 2 apples (chopped)
  • 1/4 cup brown Sugar
  • 1 tsp cinnamon

Dough

  • 1/4 cup of flour
  • 1/4 cup brown sugar
  • 1/4 cold butter (chopped)
  • 1 tsp cinnamon

Apple Pie Method:

Combine all the ingredients for the apple “filling” in a small bowl. Take 2 big squares of foil, and divide the apple mixture evenly in the middle of each of the squares.

In another bowl, add all the dough ingredients. Work the mixture with the tip of your fingers until everything is combined and resembles to wet sand. Again, divide the mixture between the 2 foil squares, and sprinkle the dough mixture on top of the apple “filling”.

Close the foil tightly, forming a package. If you are at home, put in the oven for about 20 minutes at 350F/170ºC.
If you are at a camp site, put the package in your fire pit and cook until the dough turns golden brown.

Be careful when you open the package so you don’t burn with the steam.
