Lemon is one of those fruits that is amazing all year: refreshing in the Summer, comforting in the Winter. We can use it in savory dishes or sweet, in drinks. There are no limits to the use of lemons, plus we can find them all year around! I’m sharing a recipe that I’ve made for some time now; it’s one of those recipes that we know is good and it never fails. Another good thing about this lemon cake it’s super easy, fluffy, and full of lemony flavour. Let’s get baking!

Lemon Cake

Gather the follow ingredients:

  • 300 grs sugar
  • 2-3 lemons (zest and juice)
  • 260 grs flour
  • 170 ml oil
  • 70 grs cornstarch
  • 4 eggs
  • 170 grs milk
  • 1 tsp baking powder

Now, what needs to be done:

Start by pre-heating the oven at 180ºC (350ºF) and grease a bundt-style cake pan, with a hole and around 24cm. (This is a big cake.)

Add to your mixing bowl the sugar, the zest of one lemon, the juice of all lemons, flour, cornstarch, oil, eggs, milk and baking powder. Mix well until all is combined. (If you are using a mixing machine, stir in medium speed for 1 minute.)

Pour into the prepared pan and take it to the oven for 35 to 45 minutes. That’s it! Super easy, right?

Your kitchen and hands will be filled with the amazing lemon scent.

To finish up your cake, after is completely cool, you can dust it with powder sugar.

This cake is good to freeze if you want it to. Another idea is instead of a cake pan, you can bake minis in a muffin tin.
