Who doesn’t love homemade cookies?! But sometimes time is a factor in making cookies from scratch. I found this cake mix cookie recipe years ago and it has been my go-to cookie recipe when I’m in a rush or just feeling lazy but want a warm and gooey cookie.
Cake mix cookies are so easy to make and they always end up delicious. You can also use any flavour of cake mix! I’ve used lemon, strawberry, chocolate, carrot, and vanilla cake mix. Lemon is easily my favourite, but none have disappointed my taste buds or any company I’ve served them to.
Supplies
- 1 box of cake mix (any flavour you like!)
- 1 egg
- 1/2 cup of butter, melted
- sprinkles (optional)
- chocolate chips (optional)
- granulated sugar (optional)
Instructions
Preheat oven to 350 degrees F (175 C). Place parchment paper on baking sheets.
In a large bowl, combine cake mix, egg, and melted butter. Mix with a wooden spoon until blended.
Shape dough into 1 inch balls and it’s now time to decorate!
At this point you could:
- roll the balls in granulated sugar and flatten slightly on baking sheet
- press ball into sprinkles and flatten on sheet
- flatten balls on sheet and add chocolate chips to cookies
For this batch I used both the sprinkle and chocolate chip options.
Bake in oven for 10-12 minutes or until bottom is lightly browned.
Let cookies cool on a wire rack. Eat. Enjoy!
Cake mix cookies tend to have a harder outside and a gooey inside. I love this! They’re such a yummy and easy cookie.
