Nothing mixes better with beach camp than s’mores and sand. This is a twist on a summer classic that will bring the beach to you for camp! They look adorable and taste amazing too.
INGREDIENTS
-Pan prep: 1-2 tbsp butter, 1/3 cup powdered sugar, 1/4 cup cornstarch (alternatives can be flour-if flour is used, double recipe)
-Marshmallows: 1 bag of store bought marshmallows (the square, made to fit s’mores would be easiest) or can be homemade
-Optional: Homemade marshmallows—1 cup of water divided, 2 1/2 cups unflavored gelatin (~3 packages), 1 cup light corn syrup, pinch of salt, 1 tsp pure vanilla
-S’mores topping & decoration: 50 squares (1-2 boxes of graham crackers can suffice) crushed into fine crumbs, 16 oz bag semi-sweet chocolate (melted), 24 candy eyes
INSTRUCTIONS
Servings: ~12
Prep time: 20-45 minutes (depends if you want to use store bought marshmallows vs. homemade, homemade will need ~2-4 hrs to cool)
Cook time: 8-10 minutes
Total time: 45 minutes-1 hour
Instructions:
-Pan Prep
1. Grease the bottom and sides of a 9″” x 13″” with butter or cooking spray.
2. Combine the powdered sugar and corn starch and dust the inside of the pan.
-Optional Homemade Marshmallows
1. Sprinkle gelatin over ½ cup of water in the bowl of a stand mixer.
2. Let sit 5 minutes.
3. Stir together remaining water, sugar, corn syrup and salt in a small saucepan set over medium heat.
4. Cook, covered for 4 minutes.
5. Remove lid and cook, without stirring until the mixture reaches 240 degrees Fahrenheit (about 7-8 minutes.)
6. Slowly pour hot liquid into the gelatin with the mixer turned on low speed.
7. Increase mixer speed to high and whip until the marshmallow becomes very thick and cools to a lukewarm temperature, about 12-15 minutes.
8. Add the vanilla and whip just to combine.
9. Spread the marshmallow into an even layer in the pan.
10. Dust top with powdered sugar/corn starch.
11. Let cool for 4 hours.

-S’mores toppings & decorations
1. Turn marshmallow out onto a cutting board, cut into star shapes. For store bought, square shaped work best, cut into star shapes with cookie cutter or knife. If you only have classic round available, a rolling pin can be used to flatten them.
2. Dip in melted chocolate, attach two candy eyes, and coat in crushed graham crackers.
3. Set on a parchment paper lined baking sheet and allow the chocolate to harden before serving.
