Need a sweet treat in between hitting the boardwalk and playing chess by the pool? No need to worry about your popsicle melting before you finish; Troop Sunset is here to save the day with Barbie’s Dreamhouse inspired Beachsicles—a marshmallowy treat in the shape of a classic popsicle to fulfill your Beach Camp dreams <3
INGREDIENTS
- 3 Tablespoons salted butter
- 1 Package (10 oz.) marshmallows
- 6 Cups puffed rice cereal
- Long popsicle sticks or wooden skewer
- Pink candy melts -OR- white chocolate chips with red food dye (natural, vegan, or otherwise!)
- 13” X 9” X 2” Pan coated with cooking spray
Optional for Decoration:
- Printer and paper, with tape or other adhesive (optional)
- Sprinkles and other decorations (optional)
- Strawberry, lemon, and/or vanilla crème wafers (optional)
- Cookie cutter (optional)
- Natural Food Dye alternative: powdered sugar and raspberries (optional)

INSTRUCTIONS
-Melt salted butter (3 tablespoon) in medium saucepan over low heat
-Add marshmallows (10 oz.) to pan while stirring until completely melted; immediately remove from heat
-Add puffed rice cereal (6 cups) to pan off stove and stir until well coated
-Pour rice and marshmallow mixture into a 13” X 9” X 2” pan coated with cooking spray; press evenly with buttered spatula or wax paper to create an even layer of treats
-Let cool before eating as is OR turn it into a Beachsicles by refrigerating the cooled pan to set treats before decorating

Decorating:
-Print, color, and cut out the sweet little pictures that Counselor Swing Barbie lovingly made for decorating the sticks later; I printed them at 50% scale
-Using a buttered knife or cookie cutter, cut treats to desired size/shape; I cut small rectangles and cooled them again for 10 minutes
-Insert your “popsicle stick” into the treat–be careful to not squish it or break it apart!
-Heat melted candy/white chocolate using these instructions https://www.wikihow.com/Melt-Candy-Melts; add color if you want!
-Dip or drizzle treats with melted candy; have fun and use as much or as little as you’d like
-Add sprinkles or whatever pleases your little plastic heart. This Barbie used strawberry flavored candy melts, strawberry creme wafers, and a hot pink sprinkle mix
-Attach printed cut outs to the popsicle sticks in whatever way works for you! I just rolled a piece of tape and put it onto the stick before placing the printout

Beach Camp Tips:
-You can be anything and so can your treat! The point is to be creative and use what we have/what is available so don’t worry about having the same exact ingredients and workflow. We don’t even blame you if you don’t make it to the decorating step 😉
-Counselor Sports Lesbian Barbie (the author of this blog post) used Dandies vegan marshmallows and they work great!
-Counselor Weird Barbie recommends toasting the undecorated treats over the campfire if that’s more your style!
Recipe Tips:
-Prep the pan with spray or parchment/wax paper before cooking
-Grease or butter the spatula or spoon before cooking
-Wet hands before handling treats to lessen the sticky messes you will surely encounter
-You can substitute one 7 oz. jar of marshmallow fluff instead of marshmallows
-Freeze your treats for later by layering them in a container with wax paper-let them stand 15 mins before serving
-If using large marshmallows, some people choose to cut them before cooking to save on time spent melting (this Barbie used mini marshmallows instead!)
