Troop Pulsar has arrived on a planet called Camp-11 through a space rift in their cabin. The planet’s core is cold; much like the insides of this cake! To represent the cloudy atmosphere, we’ll cover this cake in airy meringue. You can use the recipe below to make a base for the cake or use your favorite gluten free or vegan base, or maybe try brownies. You can also get a store bought cake base – we know how busy camp can be! To make the recipe vegan, use vegan ice cream or sorbet and look up meringue recipes that use aquafaba.

Ingredients:

Cake base (or a store bought cake base or your own favourite cake recipe)

  • 2 eggs
  • 3/4 dl / 1,4 cups / 64 grams sugar
  • 1 dl / 0,4 cups / 65 grams flour
  • 1/2 teaspoon baking powder
  • A bit of butter and breadcrumbs/flour

Meringue

For single serving:

  • 1 egg white
  • 3 tablespoons of powdered sugar

For 2 to 3 people:

  • 3 egg whites
  • 1 dl / 0,4 cups / 60 grams of powdered sugar
  • Optional: food coloring

Ice cream:

  • Half to a full pint of ice cream

Instructions:

Pick any flavor or flavors you like! For one person, use around a half a pint of ice cream, for two to four the whole pint.

You can make the dome shape easier by putting the ice cream into a bowl (make sure the size matches the portion) and putting it in the freezer to wait for assembly.

Cake base
This will be the same size no matter the portion you’re making. Ours is baked in a 18 cm / 7 inch round tin, but you use a bigger one as well. You will be left with leftover cake – but you can use it to make cake pops or eat it just as it is. If you have a smaller tin, feel free to reduce the amount of batter.

Place parchment paper in the tin and coat it and the sides with butter and dust with breadcrumbs or flour.

Whisk eggs and sugar into thick light colored foam. You can test it with a little bit of flour: if it stays atop the foam, you’re ready. Mix flour with baking powder and sieve it in with the eggs and sugar. Mix. Pour the batter into the tin and bake for 10 to 13 minutes until a pick comes out clean. Let the cake cool completely.

Meringue
Whisk the egg whites until stiff peaks start to form and slowly add in the powdered sugar. Last, you can drop in a bit of food coloring.

Assembly
Preheat the oven to 220 °C / 430 °F.

Place the ice cream on the cake base and cut a circle around it. Put the rest of the cake aside. Quickly cover with meringue. To achieve the look in the photo, dip the back of a teaspoon in food coloring and run it on the meringue. Bake for three to four minutes until the top of the meringue sets and gets some brown on it.

Eat right away! The ice cream got through the oven but it will soon melt.
