Well hello there Iggles! Time for another newbie cooking adventure with a really easy rice recipe that is my favorite now!

Ok, so, story: I love rice. Like, I have to be out of the kitchen when someone is preparing rice because I’ll eat all of it once it finishes cooking. Another thing I really like is curry. We have several (unfortunately small) things of curry in our cupboard. We have to stock up because sometimes Wal-Mart runs out of it here (don’t judge, we live in a super small town where Wal-Mart is basically the only option). Now, I’ve had curry rice several times before and figured, I need to make some! Best combo! I located a recipe and voilà – yummy curry rice. It’s actually called rice pilaf, just FYI.

Curry Rice

Anywho, here is the quick recipe:

INGREDIENTS:

1/4 cup water1 (14.5 ounce) can chicken broth1 cup long grain rice

1 teaspoon curry powder

1/2 teaspoon garlic powder

1/4 teaspoon ground cinnamon1/8 teaspoon paprika2 pinches ground cloves

1 small onion, coarsely chopped 

DIRECTIONS:

1. Bring water and chicken broth to a boil.
2. Combine rice, curry powder, garlic powder, cinnamon, paprika, and cloves in a bowl; stir to mix. Add spiced rice and onion to the boiling broth. Cover and cook until rice is tender, 20 to 25 minutes.

Then it is time to eat the rice and enjoy! Something I do is used pre-minced onion instead of fresh onion because when I make this, I’m being pretty lazy. I usually just eat this as a meal itself, but I am sure you can pair it with different meals.

One thing I highly suggest is making sure to check on it continually. I didn’t get a photograph because, “OH MY GOD HURRY HURRY HURRY” was going through my head, but the first time I made this, the rice did something weird and started to look like it was growing to form a curry rice mushroom. It was hilarious, and now I double check everything and watch it like a hawk. And when I saw watch, I don’t mean sit in the kitchen and read a book … not like I’ve ever done that … *ahem*
